A weekend getaway for 8 looks like...

THIS:
That is not including Canaan's playpen or oxygen (plug-in) machine, but I think I did pretty good in preparing a 3 day getaway for the first time for this new family of 8! Even though we will all be in different places...Abraham, Ezra, Isabelle and Sophie will be going to my sister's and Phil will have to stay home and put in some extra hours at work. Gabrielle, Canaan and I will be going to Billings for Gabrielle's final dance competition with
my mama!

I had to prepare for Phil too...he WILL have socks, underwear and work clothes even if I have to rub a sheet of Bounce on them, fold them and call them clean...JK...but I really did hear about a wife who did this a few times because her husband got so mad about not having clean things to
wear.

Phil would never get mad, but boy am I tempted to do this after packing ALL DAY LONG ;)

Then I was going back and forth on whether to leave him meals...usually I prepare meals, and he ends up eating hotdogs and pork n' beans. So, I will have hotdogs here for him and then make his favorite
homemade pork n'beans:


I usually make this as a serving of 24 and divide it up into two gallon ziplock baggies, but I will just do it as an 8 serving size.

Ingredients:
1 lb. Ground beef
1 c. chopped onion
22 oz. pork n' beans
15 oz. kidney beans
15 oz. butter beans
1/2 c. ketchup
1 t. prepared mustard
2 t. cider vinegar
3/4 c. brown sugar
1/2 lb. bacon (cooked and crumbled)

Put hamburger and onion in a skillet and cook until burger starts to brown and onion is tender. Drain any grease. Set cooked burger aside. Open the cans of beans and drain the juice from each can into a large bowl. Don't add the beans yet. Add the ketchup, mustard, vinegar and brown sugar to the bowl of "bean juice". Stir until well mixed. Add the beans, the hamburger and the bacon. Stir to mix. Salt to taste,
if desired.

Pour mixture into a 2 quart casserole dish and bake at 350 degrees for 40 minutes. Serve hot.

If you are making to freeze, do not cook before hand. Put into your ziplock and write the above cooking instructions on bag...including
"Thaw first".


Then, if he gets a wild hair, I have my list of meals already prepared from my nightmarish big cooking day hanging on
the fridge.

The kids and I are also making cookie bars and double chocolate brownies for him to have.

Wow! You are gonna have such a great time! I am so happy for Phil that he has such a loving wife. :) Youa re such a lovely woman of God Rossie! I love your sweet spirit and I still often think to myself, "how would Rossie handle this?" when I am challenged by a difficult situation. I love that you are constantly making sweet lemonade from life's lemons. :)
